I am trying to update the email courier to mailtrap. In the logs it still shows mailsurper.

Ah, I see. Without knowing too much about your set up, it loos like Kratos is not picking up the config change. Did you try restarting?

Thank you <@U03RSG5ST1Q>, restarting the docker container was not enough. I restarted the server and it worked.
